Beijing, Jing for short, is the nation's political, economic, cultural and educational center as well as China's most important center for international trade and communications. China, one of the countries that can boast of an ancient civilization, has a long and mysterious history - almost 5,000 years of it! Like most other great civilizations of the world, China can trace her culture back to a blend of small original tribes which have expanded till they became the great country we have today.

Emperor throneIt is recorded that Yuanmou man is the oldest hominoid in China and the oldest dynasty is Xia Dynasty. From the long history of China, there emerge many eminent people that have contributed a lot to the development of the whole country and to the enrichment of her history. Among them, there are emperors like Li Shimin (emperor Taizong of the Tang), philosophers like Confucius, great patriotic poets like Qu Yuan and so on.

Chinese society has progressed through five major stages - Primitive Society, Slave Society, Feudal Society, Semi-feudal and Semi-colonial Society, and Socialist Society. The rise and fall of the great dynasties forms a thread that runs through Chinese history, almost from the beginning. Since the founding of the People's Republic of China on October 1st, 1949, China has become a socialist society and become stronger and stronger.

Keropok lekor, anyone?

Tasty, crunchy, fishy, yummy are likely some of the words you’ll come across by Malaysians and visitors alike, in describing the popular traditional snack, keropok lekor.

Keropok lekor, a specialty of the state of Terengganu and states situated along the east coast Peninsular Malaysia is a heavenly indulgence with its crunchy, slightly fishy taste, a popular treat among locals.

It’s slightly greyish colour, ground fish mixed with sago flour, is sliced into chunky sized- bits before frying into a warm, golden hue. It is best eaten, hot off the wok.

The fragrant smell of the keropok, simmering gently in a wok, awakens the senses. For keropok lekor enthusiasts, it is a refreshing smell, and instantly makes one hungry!

De-boned fish such as ikan selayang (decapterus russellii), ikan tamban (sardine-like fish), ikan parang (herring) or ikan kerisi is used to make the keropok (crackers). Ikan selayang is popular as the fish has a sweet taste. Mixed with sago flour, it is kneaded into long dough, cut, and boiled for several hours.

There are two ways to make keropok lekor. The first is to dry the (newly) boiled dough under the sun. Once dried, it will be sliced thinly to make pre-fried keropok lekor or known as keropol lekor keeping (slices).

The other variety is to cut the boiled dough and deep-fry it into a heated wok. This is favoured by many, as this preserves the excellent taste of the keropok. (Make you sure you don’t make the mistake of washing the boiled fish, as this most certainly kills the taste!)

Eaten freshly fried from the wok with some special chilli sauce dipping, it is certainly a popular snack time choice!

Hong Kong TravelHong Kong is located in south China, 32km (20 miles) east of the mouth of the Pearl River and 135km (84 miles) southeast of Guangdong province. Hong Kong island and Kowloon Peninsula are the political, economic, cultural and traffic hub of Hong Kong. Hong Kong is 8 hours ahead of Greenwich Mean Time and is on the other side of the international Date Line (eastern hemisphere), this means people lose one day when travelling from countries in the western hemisphere, such as the US.

Statistics from the Hong Kong SAR government in 2005 shows that Hong Kong has an population of more than 7.2 million, with 6557.4 people per square kilometre. Amongst the 7.2 million population, 98% of them are Chinese and 2% of them are foreigners. Chinese and English are the official languages in Hong Kong, with Cantonese being the most widely spoken.

Hong Kong is a bridge that connects east and west. Various religious groups such as Christian, Buddhist, Confucian, Taoist, and other religious groups all co-exist in harmony in Hong Kong. Ancient Chinese traditions such as the Dragon Boat Festival, Tomb-sweeping Day and Festival of Lanterns are celebrated and revered in Hong Kong.
